In a small bowl, stir together Sweet’N Low and 1 tablespoon water until dissolved. In a blender, puree watermelon with ¼ cup water. Set aside. Rinse blender, add 2 cups ice, and process until roughly pebble sized. Fill a rocks glass halfway with crushed ice. To a cocktail shaker, add 1 cup regular ice, ¾ cup watermelon puree, lime juice, vodka, and Sweet’N Low syrup. Shake until very cold and strain over crushed ice. Garnish with lime and watermelon.
