Quick Cucumber Slices

(4 pints)

2 pounds small Kirby cucumbers (3-4 inches each)
3 tablespoons salt
3 cups water, divided
2 ¼ cups distilled white vinegar
2 tablespoons mixed pickling spices
½ teaspoon whole peppercorns
2 tablespoons Sweet 'N Low® granulated sugar substitute

Rinse cucumbers. Place in deep bowl, sprinkle with salt, and cover with 1 ½ cups water. Let stand overnight. Drain and rinse with cold water. Cut into ¼-inch slices; set aside. Combine remaining 1 ¾ cups water, vinegar, pickling spices, and peppercorns in a medium-sized saucepan. Bring to a boil and add cucumbers. Simmer 6-8 minutes, until tender-crisp. Add Sweet 'N Low. Pour into 4 hot, sterilized pint jars, dividing whole spices evenly among jars, leaving ½-inch headspace. Seal according to manufacturer's directions. Process 10 minutes in hot water bath. Cool before storing.
