In a medium bowl, whisk together lemon juice, red wine vinegar, garlic, salt, oregano, and Sweet’N Low®. Gradually whisk in olive oil.
Cook pasta according to package directions, drain well, and rinse under cold water until cool. Transfer to a large bowl.
Toss pasta with dressing, cucumber, onion, tomatoes, and spinach. Sprinkle with feta.
