  • 2 envelopes unflavored gelatin
  • 1 ¾ teaspoons Sweet'N Low zero calorie sweetener (7 packets)
  • 4 eggs, separated
  • 1 cup skim milk
  • 2 ½ cups creamed cottage cheese
  • 1 ½ teaspoons vanilla extract
  • 1 teaspoon almond extract
  • ⅓ teaspoon salt
  • Graham cracker crust (optional)


In medium saucepan, mix gelatin with Sweet'N Low; blend in egg yolks beaten with milk. Let stand 1 minute. Stir over low heat until gelatin is completely dissolved, about 5 minutes. Pour into large bowl. With electric mixer, add remaining ingredients, one at a time, beating well after each addition. Chill, stirring occasionally, until mixture mounds slightly when dropped from spoon. In large bowl, beat egg whites until stiff. Fold into gelatin mixture. Turn into 9-inch spring-form pan or prepared crust; chill until firm. Garnish, if desired, with sliced fresh fruit.

Graham cracker crust:
In small bowl, combine ¾ cup graham cracker crumbs with 1 tablespoon melted butter or margarine; press into 9-inch pie pan and chill.
