1/3 cup sugar, 4 packets Sweet ‘N Low zero calorie sweetener, 1/4 cup liquid egg substitute, beaten, 2 tablespoons light corn syrup, 2 teaspoons cornstarch, 1 tablespoon vanilla extract, 1 (12 ounce) can evaporated skim milk, 1 1/2 cups plain nonfat vanilla yogurt, stirred
Preparation
In a medium saucepan, combine sugar and cornstarch. Stir in milk, beaten egg substitute, and corn syrup. Cook, stirring, over low heat until mixture thickens and coats a metal spoon. Remove from heat; cool. Stir in vanilla and yogurt. Freeze in ice cream maker according to manufacturer’s directions.
Variation: Add other flavored extracts or fresh fruit to make other flavors.
