1 cup frozen strawberries, thawed, 2 packets SweetN Low zero calorie sweetener, 2 ounces vodka, ½ small lemon, 10 mint leaves, Sparkling water, Fresh strawberries and mint sprigs, for garnish
Preparation
In a blender, puree strawberries until smooth. Press puree through a fine mesh strainer using a silicone spatula. Stir SweetN Low into puree. To a cocktail shaker add vodka, lemon, and mint. Muddle until lemon and mint are crushed. Fill shaker halfway with crushed ice and add the strawberry puree. Cover and shake until well-chilled, about 15 seconds. Strain into two chilled cocktail glasses, top with a splash of sparkling water and garnish each glass with a strawberry and a mint sprig.
