Ingredients

2 envelopes unflavored gelatin, 1 ½ cups cut-up fresh or frozen unsweetened strawberries, 1 teaspoon vanilla extract, 1 cup low-fat vanilla yogurt, ½ package (4 ounces) reduced-calorie cream cheese, softened, 1 teaspoon Sweet’N Low zero calorie sweetener, 1 tablespoon orange juice, 1 tablespoon orange-flavored liqueur, ¼ cup granulated sugar, 1 can (20 ounces) crushed pineapple in juice, ½ cup cold water, ¼ cup heavy cream, whipped

Preparation

In small saucepan, sprinkle gelatin over water to soften. Over low heat, cook until gelatin dissolves completely. In large bowl, combine pineapple and its juice, sugar, liqueur, orange juice, and Sweet’N Low; stir in dissolved gelatin. In medium-size bowl, beat cream cheese until light; stir cream-cheese mixture and strawberries into pineapple mixture. Refrigerate 30 minutes or until mixture starts to gel; fold in whipped cream. Spoon mixture into 9-inch square dish; refrigerate until firm. Cut into squares to serve.
