Ingredients

1 1/2 pounds lean ground pork, 1/8 teaspoon nutmeg, 1/4 teaspoon thyme, 1/4 teaspoon sage, 1/4 teaspoon rosemary, 1 packet Sweet ‘N Low zero calorie sweetener, 1 teaspoon salt, 2 eggs, beaten, 1/2 cup chicken-flavored bouillon, 1 1/2 cups cubed fresh whole-wheat bread, crusts removed, 2 tablespoons lemon juice, 2 medium-size apples, peeled cored, and finely chopped, 1 teaspoon grated lemon peel, 1/3 cup coarsely chopped walnuts, 1 clove garlic, crushed, 1 medium-size onion, finely chopped, Chopped fresh parsley

Preparation

Preheat oven to 350F. In large bowl, combine pork, onion, garlic, walnuts, and lemon peel. In separate bowl, toss apples in lemon juice and add to pork mixture. Soak bread in bouillon. Add to pork with eggs, salt, Sweet ‘N Low, and seasonings. Thoroughly mix all ingredients, mold into 12-inch loaf, and place in shallow roasting pan. Bake, uncovered, 1 hour to 1 hour 15 minutes, or until loaf is brown and juices run clear when pricked. Let stand 10 minutes. Pour off fat. Sprinkle top with parsley.
