Ingredients

3/4 cup (natural) smooth peanut butter, 1/2 teaspoon salt, 1 teaspoon baking soda, 1/4 cup soy flour, 1/2 cup whole wheat flour, 1/4 cup all-purpose flour, 1 teaspoon vanilla extract, 3 tablespoons orange juice, 1/4 cup liquid egg substitute or 1 egg, 1 tablespoon grated orange rind, 2 1/2 teaspoons or 8 packets Sweet’N Low zero calorie sweetener, 1/3 cup Sugar in the Raw natural cane turbinado sugar, 1/4 cup vegetable shortening, 1 cup finely chopped dry roasted unsalted peanuts

Preparation

Preheat oven to 375F. In large bowl, combine peanut butter and shortening, blending well. Stir in Sugar in the Raw natural cane turbinado sugar, Sweet’N Low zero calorie sweetener, and orange rind, beating until light and fluffy. Add egg substitute, orange juice and vanilla extract, blending well. In medium bowl, combine all-purpose flour, whole wheat flour, baking soda, and salt; gradually add to peanut butter mixture, blending well. Shape dough into 1-inch balls; roll in peanuts and place on ungreased baking sheet. Bake 8 to 10 minutes or until lightly browned. Remove from cookie sheet to wire rack to cool.
