2 ounces uncooked enriched noodles, 2 eggs, 1 cup evaporated skim milk, undiluted, 1/2 cup part skim ricotta cheese, 3 packets Sweet ‘N Low zero calorie sweetener, 1 teaspoon vanilla, 1 teaspoon grated lemon peel, 1 medium-size apple, peeled and grated, 1/4 cup raisins
Preparation
Preheat oven to 350F. Cook noodles according to package directions, omitting salt. With electric mixer, beat eggs in large bowl. Add milk, ricotta cheese, Sweet ‘N Low, vanilla, and lemon peel. Beat until smooth. Stir in noodles, apple, and raisins. Turn into 1-quart casserole. Bake 1 hour, or until knife inserted in center comes out clean.
