2 tablespoon chopped red onion, 1 cup chopped celery, cucumber, or green pepper, 2 packets Sweet’N Low® zero calorie sweetener, Dash hot pepper sauce, 1 cup tomato juice, 2 tablespoons vinegar, 3/4 cup water, 1 envelope unflavored gelatin
Preparation
In medium saucepan, soften gelatin in water. Heat and stir until gelatin is completely dissolved. Stir in tomato juice, vinegar, hot pepper sauce, and Sweet’N Low®. Chill, stirring occasionally, about 1 hour, or until mixture is consistency of unbeaten egg whites. Fold in vegetables. Turn into 3-cup mold or bowl and chill until firm.
