1 package gelatin, 1 cup whole milk, well chilled, 3 teaspoons Sweet’N Low zero calorie sweetener, 2 cups heavy cream, well chilled, 2 teaspoons vanilla extract
Preparation
In saucepan, combine gelatin and whole milk. Let stand 5 minutes. Cook and stir over medium heat until mixture just comes to a boil. Remove from heat. Add heavy cream, Sweet’N Low, and vanilla; mix well. Chill until cold, stirring occasionally. Freeze in electric ice cream freezer for approximately 15 minutes. Variations: Mint Chip: Omit the vanilla and replace with 1-teaspoon peppermint extract. Chop your favorite 4 oz. semi-sweet chocolate bar into tiny pieces and add last 5 minutes of freezing.
