1 cup coconut water, ½ cup water, ½ cup frozen mango, 1 packet SweetN Low®, ½ teaspoon coconut extract, ¼ cup fat-free half-and-half, 2 teaspoons dragon fruit powder, ¼ cup fresh or frozen dragon fruit cubes for garnish (optional)
Preparation
1. In a blender, process coconut water, water, mango, sweetener, and extract until smooth. Strain into a cocktail shaker full of ice. Add powder and half-and-half, and shake vigorously until well chilled, about 7 seconds. 2. Strain into two serving glasses filled with ice, and garnish with dragon fruit cubes.
