4 envelopes unflavored gelatin, 1-1/2 teaspoons (6 packets) Sweet ‘N Low zero calorie sweetener, 2-1/2 cups unsweetened pineapple juice, heated to boiling, 1 cup vanilla ice milk, 2 tablespoons flaked coconut, 1/8 teaspoon rum extract
Preparation
In medium bowl, mix gelatin with Sweet ‘N Low; add hot juice and stir until gelatin is completely dissolved. Stir in remaining ingredients; blend thoroughly. Pour into 8- or 9-inch baking pan and chill until firm. To serve, cut into 1-inch squares.
