Vanilla Non-Fat Frozen Yogurt
(1 quart (8 1/2-cup servings))
1/3 cup sugar
4 packets Sweet 'N Low® granulated sugar substitute
¼ cup liquid egg substitute, beaten
2 tablespoons light corn syrup
2 teaspoons cornstarch
1 tablespoon vanilla extract
1 (12?ounce) can evaporated skim milk
1 ½ cups plain nonfat vanilla yogurt, stirred
In a medium saucepan, combine sugar and cornstarch. Stir in milk, beaten egg substitute, and corn syrup. Cook, stirring, over low heat until mixture thickens and coats a metal spoon. Remove from heat; cool. Stir in vanilla and yogurt. Freeze in ice cream maker according to manufacturer's directions.
Variation: Add other flavored extracts or fresh fruit to make other flavors.
