Tomatoes Vinaigrette
(8 servings)
8 large tomatoes, peeled and quartered
1/3 cup red wine vinegar
¼ cup vegetable oil
3 tablespoons diced reduced-salt sweet butter chip pickles
2 tablespoons chopped parsley
1 clove garlic, minced
¼ teaspoon Nu-Salt® salt substitute (or salt)
¼ teaspoon Sweet 'N Low® granulated sugar substitute
Place tomatoes in serving bowl and refrigerate until well chilled. Meanwhile, in blender or food processor, combine remaining ingredients; blend at low speed about 1 minute. Pour over chilled tomato wedges.
