Strawberry Cream Dessert
(Makes 12 squares)
2 envelopes unflavored gelatin
1/2 cup cold water
1 can (20 ounces) crushed pineapple in juice
1/4 cup granulated sugar
1 tablespoon orange-flavored liqueur
1 tablespoon orange juice
1 teaspoon Sweet 'N Low®
1/2 package (4 ounces) reduced-calorie cream cheese, softened
1 cup low-fat vanilla yogurt
1 teaspoon vanilla extract
1 1/2 cups cut-up fresh or frozen unsweetened strawberries
1/4 cup heavy cream, whipped
In small saucepan, sprinkle gelatin over water to soften. Over low heat, cook until gelatin dissolves completely. In large bowl, combine pineapple and its juice, sugar, liqueur, orange juice, and Sweet 'N Low; stir in dissolved gelatin.
In medium-size bowl, beat cream cheese until light; stir cream-cheese mixture and strawberries into pineapple mixture. Refrigerate 30 minutes or until mixture starts to gel; fold in whipped cream. Spoon mixture into 9-inch square dish; refrigerate until firm. Cut into squares to serve.
