Pork and Apple Loaf
(8 servings)
1 ½ pounds lean ground pork
1 medium-size onion, finely chopped
1 clove garlic, crushed
1/3 cup coarsely chopped walnuts
1 teaspoon grated lemon peel
2 medium-size apples, peeled cored, and finely chopped
2 tablespoons lemon juice
1½ cups cubed fresh whole-wheat bread, crusts removed
½ cup chicken-flavored bouillon
2 eggs, beaten
1 teaspoon salt
1 packet Sweet 'N Low® granulated sugar substitute
¼ teaspoon rosemary
¼ teaspoon sage
¼ teaspoon thyme
1/8 teaspoon nutmeg
Chopped fresh parsley
Preheat oven to 350°F. In large bowl, combine pork, onion, garlic, walnuts, and lemon peel. In separate bowl, toss apples in lemon juice and add to pork mixture. Soak bread in bouillon. Add to pork with eggs, salt, Sweet 'N Low, and seasonings. Thoroughly mix all ingredients, mold into 12-inch loaf, and place in shallow roasting pan.
Bake, uncovered, 1 hour to 1 hour 15 minutes, or until loaf is brown and juices run clear when pricked. Let stand 10 minutes. Pour off fat. Sprinkle top with parsley.
