Pistachio Apples with Brie

A twist on a long-time favorite, crisp apples are hollowed out, filled with layers of creamy Brie and sweet rum-soaked diced apples, and topped with a sprinkling of crushed pistachios.

4 tart, firm Granny Smith or Fuji apples
1/4 cup rum
1/2 teaspoon Sweet'N Low® granulated sugar substitute
1/4 pound Brie
1/4 cup crushed pistachios

Preheat oven to 350º F. Wash and core the apples. Using a melon-baller, hollow-out the apples to within 1/2" of outside. Reserve 1/3 of apple and set aside.

In small bowl, combine the reserved apple, rum and Sweet'N Low granulated sugar substitute to create a sweet apple mixture. Marinate 15 minutes.

Slice Brie into 1/4" thick slices. Layer the Brie and sweet apple mixture in the cored apples. Place filled apples in nonstick baking dish. Sprinkle the apples with the crushed pistachios. Bake for 30 minutes or until tender. Cool completely before serving.
