Pineapple-Cabbage Slaw
(8 servings)
8 cups shredded cabbage (about 1 pound)
½ cup shredded carrot
2 green onions, sliced
1 can (8 ounces) juice-packed pineapple chunks, drained
½ cup nonfat sour cream
¼ cup cider vinegar
2 tablespoons nonfat mayonnaise
½ teaspoon (1 ½ packets) Sweet 'N Low® granulated sugar substitute
½ teaspoon poppy seeds
¼ teaspoon ground white pepper
In a large bowl, combine cabbage, carrot, onion, and pineapple. In a medium bowl, whisk together remaining ingredients. Pour over cabbage mixture and toss to combine. Cover and refrigerate for at least one hour.
