Pina Colada Squares
(5-6 dozen squares)
4 envelopes unflavored gelatin
1-˝ teaspoons (6 packets) Sweet 'N Low® granulated sugar substitute
2-˝ cups unsweetened pineapple juice, heated to boiling
1 cup vanilla ice milk
2 tablespoons flaked coconut
1/8 teaspoon rum extract
In medium bowl, mix gelatin with Sweet 'N Low; add hot juice and stir until gelatin is completely dissolved. Stir in remaining ingredients; blend thoroughly. Pour into 8- or 9-inch baking pan and chill until firm. To serve, cut into 1-inch squares.
