Pepper-Onion Relish
(4 pints)
1 ¾ pounds onions (about 7 medium size), finely chopped
1 ½ pounds green peppers (about 6 medium size), cored, seeded, and finely copped
1 pound sweet red peppers (about 4 medium size), cored, seeded, and finely chopped
3 cups distilled white vinegar
1 cup water
4 teaspoons salt
¼ cup Sweet 'N Low® granulated sugar substitute
Combine all ingredients except Sweet 'N Low in large pot or dutch oven. Bring slowly to a boil; cook over medium heat 15-20 minutes or until slightly thickened. Stir in Sweet 'N Low. Pour into 4 hot, sterilized pint jars, allowing 1/4?inch headspace. Seal according to manufacturer's directions. Process 15 minutes in boiling water bath. Cool before storing.
