Peachy Pork Chops
(6 servings)
6 lean pork chops (about 2 pounds)
½ teaspoon freshly ground pepper
1 can (1 pound) juice-packed peach halves
3 packets Sweet 'N Low® granulated sugar substitute
2 teaspoons lemon juice
¼ teaspoon cinnamon
¼ teaspoon ginger
3 whole cloves
2 teaspoons all-purpose flour
Carefully trim away any visible fat from chops. Season chops with pepper and brown in large nonstick skillet.* Drain off fat. Drain peaches, reserving ½ cup juice. Combine juice with Sweet 'N Low, lemon juice, and spices. Pour over pork; cover tightly. Simmer gently over very low heat, about 45 minutes, or until pork is well cooked, turning chops once. Remove chops to serving platter and keep warm. Add peaches to liquid in skillet. Cover and heat through, about 5 minutes. Place one peach half on each chop. Mix flour with remaining juice and stir into pan juices. Heat and stir until sauce thickens, about 5 minutes. Remove cloves. Pour sauce over chops.
