Old-Fashioned Banana Streusel Cake

(16 (about 7 inch) servings)

1 cup fat free margarine, divided
1 cup sugar
12 packets Sweet 'N Low® granulated sugar substitute
2 ¼ cups cake flour, divided
½ cup Grape Nuts cereal
2 tablespoons brown sugar, divided
½ teaspoon Sweet 'N Low® Brown granulated sugar substitute, divided
½ cup liquid egg substitute
2 teaspoons vanilla
1/3 cup low fat buttermilk
3 large bananas (1 ½ cups pureed)
1 teaspoon baking soda
1 teaspoon baking powder
½ teaspoon salt-substitute, divided (optional)

Preheat oven to 350°F. Spray a 9 x 13-inch pan with non-fat cooking spray. For streusel, blend with fork or pastry blender ¼ cup margarine, 1 tablespoon brown sugar, ¼ teaspoon Sweet 'N Low Brown, 3/8 cup sugar, 4 ½ packets Sweet 'N Low, Grape Nuts cereal, ½ cup flour, and ¼ teaspoon salt-substitute until just moistened. Set aside. For cake, use mixer to cream 5/8 cup sugar, 7 ½ packets Sweet 'N Low, 1 tablespoon brown sugar, ¼ teaspoon Sweet 'N Low Brown, vanilla, and ¾ cup margarine until smooth. Add egg substitute and mix well (about 3 minutes.) Add buttermilk and bananas. Mix well to combine. Sift 1 ¾ cups flour, baking powder, baking soda, and ¼ teaspoon salt-substitute. Add gradually to batter, mixing until smooth. Transfer batter to prepared pan. Smooth surface with spatula. Sprinkle reserved streusel evenly over the surface. Bake until medium brown and toothpick inserted in center comes out clean, about 35-45 minutes. Let cool 30 minutes before serving.
