Oatmeal Cookies
(2 1/2 dozen cookies)
1 1/4 cups rolled oats
3/4 cup all-purpose flour
1/2 cup diet margarine
1/3 cup packed dark brown sugar
3 packets Sweet 'N Low® granulated sugar substitute
1 egg
1 teaspoon vanilla extract
1/2 teaspoon ground cinnamon
1/2 teaspoon baking powder
1/2 teaspoon ground ginger
1/4 teaspoon salt
1/3 cup raisins, chopped (optional)
Preheat oven to 375°F. In large bowl, with electric beaters, mix together all ingredients. Drop by heaping teaspoonfuls onto baking sheets sprayed with nonstick cooking spray. Bake 8 to 10 minutes or until brown around edges. Cool on wire rack.
