Mock Herring
(About 3 cups)
2 medium onions, sliced
2 stalks celery, cut into 1-inch pieces
1 small eggplant, peeled and cut into long strips, 1-inch wide
1 cup plain low-fat yogurt
1 tablespoon lemon juice
1 packet Sweet 'N Low® granulated sugar substitute
¼ teaspoon salt
1/8 teaspoon ground cloves
1 bay leaf
Steam onions and celery in vegetable steamer over boiling water 5 to 6 minutes. Add eggplant and steam about 5 minutes, or until soft but not mushy. Remove vegetables to bowl and set aside to cool. In separate bowl, combine remaining ingredients; mix gently with cooled vegetables. Remove bay leaf. Chill thoroughly. Serve on whole-grain bread or crackers.
