Grated Carrot Condiment
(8 servings)
4 ¼ cups coarsely grated carrots (about 1 ¼ pounds)
½ teaspoon Nu-Salt® salt substitute
¼ cup red wine vinegar
1 tablespoon finely chopped fresh jalapeno peppers
¼ cup raisins
¼ teaspoon Sweet 'N Low® granulated sugar substitute
In large bowl, stir together carrots and Nu-Salt; let stand at room temperature about 30 minutes. Place carrots between paper towels and squeeze to absorb excess moisture. In another large bowl, combine vinegar, jalapeno peppers, raisins, and Sweet 'N Low; stir until Sweet 'N Low dissolves. Stir in carrots until well blended. Let mixture marinate at room temperature at least 15 minutes before serving.
