Georgia Peach Cobbler
(6 serves)
1 egg, beaten
½ cup 1% low fat milk
4 teaspoons Sweet 'N LowÒ Brown granulated sugar substitute
1/4 cup butter, melted
2 cups sliced fresh or canned water-packed peaches
½ teaspoon grated lemon rind
1 teaspoon vanilla extract
1 tablespoon lemon juice
1 cup flour
1 cup plain yogurt
1 teaspoon baking powder
¼ teaspoon salt
Dash nutmeg
Combine egg and 3 teaspoons Sweet 'N Low Brown, beat well. Add lemon rind and vanilla. Sift flour, baking powder, and salt together; add to mixture alternately with milk. Add butter, mix, and pour into an 8-inch layer cake pan sprayed with nonstick cooking spray, spreading evenly. Sprinkle sliced peaches with lemon juice and arrange on top of batter. Sprinkle top with remaining Sweet 'N Low Brown. Bake at 350°F for 1 hour, or until cake is golden brown. Cool in pan. Serve warm with yogurt and nutmeg.
