Garden Fresh Salad
(6 servings)
1 envelope unflavored gelatin
¾ cup water
1 cup tomato juice
2 tablespoons vinegar
Dash hot pepper sauce
2 packets Sweet 'N Low® granulated sugar substitute
1 cup chopped celery, cucumber, or green pepper
2 tablespoon chopped red onion
In medium saucepan, soften gelatin in water. Heat and stir until gelatin is completely dissolved. Stir in tomato juice, vinegar, hot pepper sauce, and Sweet 'N Low. Chill, stirring occasionally, about 1 hour, or until mixture is consistency of unbeaten egg whites. Fold in vegetables. Turn into 3-cup mold or bowl and chill until firm.
