Fluffy Pink Frosting

(1 ½ cups)

¼ cup sugar
1 tablespoon water
1 packet Sweet' N Low® granulated sugar substitute
1 egg white
1/8 teaspoon cream of tartar
¼ teaspoon vanilla
2 drops red food coloring

In top of double boiler, combine sugar, water, Sweet 'N Low, egg white, and cream of tartar. Using an electric mixer, beat on high speed 1 minute. Set over boiling water and beat until mixture forms soft peaks, about 4 minutes. Remove from heat and add vanilla and food coloring. Continue beating 1 minute, or until thick enough to spread.
