Faux Very Berry Ice Cream
(1 quart)
2 teaspoons Sweet 'N Low granulated sugar substitute
2/3 cup non-fat dry milk
½ cup cold water
1 teaspoon vanilla extract
4 cups frozen mixed fruit (strawberries, blueberries, raspberries)
In blender, combine water, Sweet 'N Low, dry milk powder, and vanilla. Cover and process for 10 seconds. Add 2 cups frozen fruit. Re-cover and blend until fruit is chopped in small pieces. Add remaining fruit as needed and blend until mixture is smooth. Serve at once.
