Ingredients

  • 8 large tomatoes, peeled and quartered
  • 1/3 cup red wine vinegar
  • 1/4 cup vegetable oil
  • 3 tablespoons diced reduced-salt sweet butter chip pickles
  • 2 tablespoons chopped parsley
  • 1 clove garlic, minced
  • 1/4 teaspoon Nu-Salt salt substitute (or salt)
  • 1/4 teaspoon Sweet 'N Low zero calorie sweetener

Preparation

Place tomatoes in serving bowl and refrigerate until well chilled. Meanwhile, in blender or food processor, combine remaining ingredients; blend at low speed about 1 minute. Pour over chilled tomato wedges.
