Ingredients

  • 4 1/4 cups coarsely grated carrots (about 1 ¼ pounds)
  • 1/4 teaspoon Sweet 'N Low zero calorie sweetener
  • 1/4 cup red wine vinegar
  • 1/2 teaspoon Nu-Salt salt substitute
  • 1 tablespoon finely chopped fresh jalapeno peppers
  • 1/4 cup raisins

Preparation

In large bowl, stir together carrots and Nu-Salt; let stand at room temperature about 30 minutes. Place carrots between paper towels and squeeze to absorb excess moisture. In another large bowl, combine vinegar, jalapeno peppers, raisins, and Sweet 'N Low; stir until Sweet 'N Low dissolves. Stir in carrots until well blended. Let mixture marinate at room temperature at least 15 minutes before serving.
