De-Lish Fish Soup

(6 servings)

4 cups water
¾ teaspoon salt
1 bay leaf
2 pounds fresh fish fillets (sole or flounder)
1 cup thinly sliced celery
1 cup thinly sliced carrots
1 can (1 pound) tomatoes
1 cup peeled, diced potatoes
4 thinly sliced green onions
2 teaspoons dill weed
2 packets Sweet 'N Low® granulated sugar substitute
Freshly ground pepper to taste

In large saucepan, bring water to a boil. Add salt, bay leaf, and fish. Gently simmer, uncovered, 10 minutes. Remove fish and set aside. Strain broth and bring to boil again. Add celery, carrots, tomatoes, and potatoes. Cover and simmer 10 minutes, or until vegetables are tender. Flake fish and add to saucepan, with green onions, dill weed, and Sweet 'N Low. Allow to heat through without boiling. Season with pepper.
