Creamy Cucumber Antipasta
(8 servings)
1 container (8 ounces) plain low-fat yogurt
2 tablespoons distilled white vinegar
2 tablespoons chopped fresh chives
2 teaspoons dill weed
1 teaspoon celery seed
2 packets Sweet 'N Low® granulated sugar substitute
1/2 teaspoon salt
1/2 teaspoon dry mustard
Dash freshly ground pepper
3 medium-size cucumbers, peeled and sliced thin
In a bowl, combine all ingredients except cucumbers. Mix thoroughly. Toss cucumber slices in dressing and marinate several hours in refrigerator.
