Crab and Cheese Casserole

(6 servings)

2 tablespoons vegetable oil
1 cup sliced celery
½ cup sliced onion
½ cup thinly sliced carrot
½ cup sliced mushrooms
¼ cup diced green pepper
1 can (2 pounds) whole tomatoes
1 ½ cups fresh or frozen flaked crabmeat
1 cup cooked brown rice
¼ teaspoon salt
1 packet Sweet 'N Low® granulated sugar substitute
1 bay leaf
½ cup (2 ounces) grated sharp Cheddar cheese

Preheat oven to 350°F. Heat oil in dutch oven or other oven proof container. Sauté, celery, onion, carrots, mushrooms, and green pepper until onion is transparent. Add remaining ingredients, except cheese. Let simmer 5 minutes. Remove bay leaf. Sprinkle with cheese. Bake 20 minutes.
