Cottage Tuna Salad
(4 servings)
1 can (6½ ounces) tuna, packed in water, drained
1 cup low-fat cottage cheese
¼ cup chopped celery
¼ cup chopped green onion
2 tablespoons chopped fresh parsley
1 tablespoon capers
¼ cup plain low-fat yogurt
1 tablespoon lemon juice
½ teaspoon dry mustard
1 packet Sweet 'N Low® granulated sugar substitute
¼ teaspoon freshly ground pepper
¼ teaspoon salt
In a medium bowl, combine tuna, cottage cheese, celery, green onion, parsley, and capers. Mix remaining ingredients in separate bowl. Add to tuna mixture and mix thoroughly. Cover and chill.
