Chilled Apple Oatmeal

(Makes 2 servings)

1/2 cup oats (quick or old fashioned)
1/2 cup low-fat milk
1/2 cup plain non-fat yogurt
1/4 cup unsweetened applesauce
1 teaspoon coarsely chopped almonds
1 teaspoon pumpkin seeds (optional)
1/4 teaspoon Sweet'N Low® brand sugar substitute
Pinch each ground cinnamon and ground nutmeg

Combine all ingredients in a cereal bowl. Stir well, cover with plastic wrap and refrigerate overnight. Serve chilled.

Diabetic exchanges

:1/2 starch/bread, 1 milk, 1/2 fruit, 1/2 fat

For a complete breakfast serve with 8 ounces of milk and 1 cup of fruit.
