Borscht

(2 servings)

1 can (8 ounces) beets, undrained
½ cup plain low-fat yogurt
1 tablespoon lemon juice
1 packet Sweet 'N Low® granulated sugar substitute

Place all ingredients in blender. Cover and process at low speed 5 to 10 seconds. Mixture should be chunky. Chill.
