Basic Vanilla Ice Cream

(1 quart)

1 package gelatin
1 cup whole milk, well chilled
3 teaspoons Sweet 'N Low granulated sugar substitute
2 cups heavy cream, well chilled
2 teaspoons vanilla extract

In saucepan, combine gelatin and whole milk. Let stand 5 minutes. Cook and stir over medium heat until mixture just comes to a boil. Remove from heat. Add heavy cream, sweetener, and vanilla; mix well. Chill until cold, stirring occasionally. Freeze in electric ice cream freezer for approximately 15 minutes.

Variations:

Mint Chip: Omit the vanilla and replace with 1-teaspoon peppermint extract. Chop your favorite 4 oz. semi-sweet chocolate bar into tiny pieces and add last 5 minutes of freezing.
