Applesauce Nut Bread

(18 servings)

1 cup sifted all-purpose flour
1 cup whole-wheat flour
1/3 cup sugar
6 packets Sweet 'N Low® granulated sugar substitute
1 tablespoon baking powder
½ teaspoon salt
½ teaspoon nutmeg
½ teaspoon baking soda
1 cup chopped walnuts
1 egg
1 cup unsweetened applesauce
¼ cup vegetable oil

Preheat oven to 350°F. Spray 9x5-inch loaf pan with nonstick coating agent.* In large bowl, sift together dry ingredients; stir in nuts. In separate bowl, beat egg with electric mixer until frothy, about 30 seconds. Stir in applesauce and oil. Add to dry ingredients and stir just until blended. Pour into prepared pan. Bake 1 hour, or until toothpick inserted in center comes out clean.

: By substituting ¼ cup liquefied Butter Buds for the vegetable oil in this recipe, you can save 25 calories, 3 g fat, and 8 mg cholesterol. However, you will add 15mg of sodium.

*There's no need to spray with a nonstick coating agent if you own a nonstick 9x5-inch loaf pan.
