Apple Dumplings

(8 servings)

Pastry:

2 cups water
2 1/2 cups flour
Juice of 1 1/2 lemons, divided
2 1/2 teaspoons baking powder
1/2 teaspoon salt
3 Tablespoons butter
1/2 cup shortening
4 teaspoons cornstarch
3/4 - 1 cup milk
1/4 teaspoon cinnamon

Filling:

1/4 teaspoon nutmeg
10 teaspoons Sweet 'N LowÒ Brown granulated sugar substitute, divided
3 cups sliced, cored, peeled apples

Pastry. Sift flour, baking powder and salt. Cut in shortening to consistency of coarse meal. Stir in milk with a fork. Turn out on floured board. Fold and turn lightly a few times. Chill. Roll into a thin rectangular sheet and cut into six 5-inch squares.
Filling. Cook 8 teaspoons Sweet 'N Low Brown with the water, juice of 1 lemon, butter and cornstarch until slightly thickened. Mix remaining Sweet 'N Low Brown, juice of 1/2 lemon, cinnamon, nutmeg and apples. Put a mound of apple mixture on each pastry square. Fold over points and pinch corners together on top. Arrange in large shallow pan. Pour Sweet 'N Low Brown and water mixture over and bake at 425°F for 10 minutes. Reduce heat and bake at 350°F for 35 minutes or more.
